I came across an American cookie recipe so tried to make it work with protein but ended up with these!
Ok so they're not quite cookies, more like flapjacks but they did taste a little like Bounty chocolate bar! Not bad for 11.6g protein, 13.3g carbs and 5.7g fats per bake. Plus they are pretty filling so good to keep hunger at bay.
Ingredients: -80g Muscle Foods Protein Whey Isolate in Chocolate Milk (I would use any really good tasting choc protein) -30g oats -25ml almond milk -50g dark chocolate chips -20g coconut oil -1 egg -1/2 tsp baking powder -1/4 tsp salt -1 1/2 tsp vanilla extract -60ml honey -1 1/2 tbsp sweetener
Method: Melt the coconut oil in the microwave for about 30secs and pour it into a blender. Add the egg, almond milk, honey and vanilla extract and blend until combined. In a separate bowl, mix together the protein powder, oats, baking powder, sweetener and salt. Then add the blended mixture and stir well. Now add about half of the dark choc chips and mix again. Pour in to a smallish, shallow oven proof dish and sprinkle over the remainder of the dark choc chips. Leave to stand for about 5-10 mins before popping it in the oven at 170 degrees C for 20-25 mins. Allow to cool completely before cutting in to 8 pieces.
Can be stored in the fridge once cooled and kept for up to about 3 days.
